The Secret to The Perfect White Pizza

White pizza is one of the most underrated and under-loved pies out there. They have so much potential and unlike a regular tomato based pie they can’t rely on the classic veggie and meat toppings out there. White pies need the right toppings and the right combinations of cheeses to really hit it right.

Luckily, I live in New York aka one of the best pizza destinations in the nation. I went to four different pizza joints to check out what they are doing to their pies. What combination of toppings they put to level up their white pizza game. Then I head back home to recreate a white pie with honey and pistachios as well as make my own personalized white pie. My Overnight Pizza Dough Recipe

Ingredients

  • 700 grams of flour
  • 50 grams of whole wheat flour
  • 487 grams of water
  • 15 grams of salt
  • 1/2 teaspoon or 1 gram of instant yeast

    Instructions

    1. In a large bowl combine the flours, water, salt, and yeast. Give it a rough mix and then dump out to a lightly floured work surface. Give it a good knead and then let it rest for 5 minutes.
    2. Come back to it and then knead it for 3-5 minutes. It will be smooth but will still stick. Cover with a towel and let it rest for 10 minutes.
    3. Then shape the dough and set it into a bowl for its bulk ferment for 4-5 hours.
    4. After it has doubled in size, gently take it out and cut into 250 gram pieces or what every size dough ball works for your oven.
    5. Shape into pizza doughs balls and lay down on a sheet pan with a sprinkling of semolina. Cover with plastic wrap and set in the fridge to proof in the fridge overnight. It will be ready to use after its final overnight proof!

      Mike’s Original White Pizza

      Ingredients:

      • 1 pizza dough
      • Ricotta
      • Garlic scape pesto
      • Fresh mozzarella
      • Caramelized mushroom and onion

        Instructions:

        1. Lightly flour your work surface with some semolina and shape and stretch your dough ball into a pizza.
        2. Spread on the ricotta and then dot on some garlic scape pesto.
        3. Drop on some fresh mozzarella, caramelized mushroom, and onion.
        4. Toss into your pizza oven, I am using the ooni fyra, and cook until the pizza dough has fully cooked and the topping has melted into one delicious layer!

          Emily’s White Pizza

          Ingredients:

          • 1 pizza dough
          • Truffle Oil
          • Truffle Cheese
          • Fresh mozzarella
          • Chopped Pistachios
          • Honey

            Instructions:

            1. Lightly flour your work surface with some semolina and shape and stretch your dough ball into a pizza.
            2. Drizzle on some truffle oil and shave on some truffle cheese.
            3. Drop on some fresh mozzarella, crushed pistachios, and a touch of honey.
            4. Toss into your pizza oven, I am using the ooni fyra, and cook until the pizza dough has fully cooked and the topping has melted into one delicious layer!
            5. Drizzle on a touch more honey and enjoy while hot and crispy!
